Now divide the harvest into three processing paths:
Washed Honey Natural
The resulting coffees are not three origins. They are three expressions of one origin.
This approach helps isolate the effect of processing because the major pre-harvest variables remain relatively constant.
In a normal sourcing catalogue, a buyer might see:

That tells us the coffees are different. It does not tell us why.
A same-lot comparison asks a much better question:
What changed when processing changed?
That is the experiment.
Washed: Clarity and Acidity
The washed version provides the cleanest reference point. Removing the fruit layer before drying generally produces a cup in which the intrinsic characteristics of the coffee can be easier to identify. That does not mean washed coffees are inherently “better.” It means the sensory profile is often perceived as more transparent.
In this comparison, the washed coffee presented the brightest acidity and cleanest overall expression.
The sensory impression was less dominated by fermentation-derived fruit character and more by the coffee’s underlying structure.
For a buyer, this makes the washed lot useful for identifying:

The cup tends to answer: What does this coffee itself taste like?
That makes washed coffee an especially valuable baseline when evaluating experimental processing.
It becomes the control against which the other two versions can be understood.
Honey: Syrup and Sweetness
Honey sits between washed and natural, but that description is more useful as a sensory framework than a strict rule.
Because some or much of the mucilage remains during drying, honey processing can create a sensory profile that feels broader and sweeter while retaining considerable clarity.
In the same-lot comparison, honey shifted the coffee toward greater perceived sweetness and a more syrupy body.
The acidity remained present, but it was less visually prominent in the sensory structure than in the washed version.
The result was a cup that felt more concentrated. This is one of the reasons honey coffees can work particularly well in brewing applications where sweetness and mouthfeel are commercially desirable without losing too much definition.
The important point is that the sweetness is not simply “added” by the process.
Rather, processing changes the environment in which the coffee develops during drying and can influence the compounds and sensory balance perceived after roasting and brewing.
The honey version therefore offers a useful middle ground: more texture than the washed reference, but less fruit-driven intensity than the natural.
Natural: Fruit and Fermentation
The natural version produced the largest sensory departure from the washed reference.
Keeping the whole cherry during drying changes the fermentation and drying environment surrounding the seed. The result can be considerably more expressive, particularly in fruit aromatics and perceived fermentation character.
In this comparison, the natural coffee showed the highest fruit intensity and the strongest fermentative complexity of the three.
That does not necessarily mean stronger is better. For some buyers, that intensity is exactly the point.

Washed is often the strongest choice when the objective is to communicate:

- floral or delicate aromatics
- clean finishing characteristics
A washed Loja coffee can make sense as a premium single-origin filter coffee where transparency is part of the product story.
Honey for Sweetness and Balance
Honey can be attractive when the menu calls for a coffee with:
- pronounced sweetness
- more body
- a rounded profile
- enough clarity for filter
- enough texture for espresso
It can occupy the space between traditional clean specialty profiles and more experimental products.
Natural for Sensory Impact
Natural can be especially effective when the commercial objective is:
- strong fruit expression
- aromatic intensity
- memorable tasting notes
- greater body
- a more distinctive retail experience
For consumers discovering specialty coffee, a well-executed natural can immediately communicate that coffee does not have to taste like traditional roast-and-chocolate profiles.
What Actually Changed?
The most useful conclusion from a same-lot experiment is not that one process “wins.”
It is that processing acts as a sensory modifier.
The farm did not change. The variety did not change. The altitude did not change. The soil did not change. The harvest did not change. The processing changed.
And the cup moved accordingly. This is especially valuable when working with coffees from regions such as Loja, where terroir and variety can already provide considerable aromatic complexity.
Processing can either:
reveal that complexity or overlay it with another sensory layer.
Neither is automatically preferable. The decision depends on the objective.
Why This Matters for Specialty Buyers
For buyers, a process name should never be enough.
“Natural” does not automatically mean fruity. “Honey” does not automatically mean sweet. “Washed” does not automatically mean floral.
Those are tendencies, not guarantees. A serious evaluation should ask:
Was the same lot available in another process? What changed in the cup? What remained constant? How reproducible was the result?
That last question is particularly important. An exceptional experimental cup that cannot be reproduced is interesting.
An exceptional cup that can be repeated across harvests is commercially valuable.
A Better Way to Evaluate Process
When a same-lot comparison is available, cup the coffees side by side rather than tasting them on different days.
Keep as many variables constant as possible:
same roast approach same brewing method same dose same water same cupping protocol
Then evaluate:
Acidity — Is it brighter, softer, sharper or more complex? Sweetness — Is it clean, syrupy, caramel-like or fruit-driven? Body — Does the process create more weight or simply more intensity? Fruit — Is fruit more distinct or simply more fermented? Finish — Does the coffee become longer without becoming heavier? Clarity — Can you still identify the variety and origin?
This last question is particularly important. The best process is not necessarily the one with the most flavor.
It may be the one that adds complexity without destroying definition.
The Same Lot as a Research Tool
Same-lot processing is more than a marketing exercise. It can become an origin-level research method.
Repeat the comparison with:
different varieties different elevations different harvest dates different fermentation protocols
and the resulting database begins to reveal patterns.
Perhaps a particular variety responds exceptionally well to honey processing. Perhaps a particular altitude produces more interesting naturals. Perhaps a washed process consistently produces the highest clarity, while a controlled natural delivers the best fruit complexity.
That is where processing moves from tradition into experimentation. And that is where a producer can begin developing a real processing portfolio rather than simply offering “washed, honey and natural.”
What We Learned From One Lot
The lesson is surprisingly simple. You do not need three different farms to demonstrate the effect of processing.
You need one good coffee. Then you need the discipline to change one major variable at a time.

Washed gave us the brightest acidity and clearest expression. Honey pushed sweetness and syrupy body forward. Natural amplified fruit and fermentation complexity.
